Accompanied by a velvety oriental fig marmalade,
Placed on a Black Pepper shortbread – as crisp as a dance step in the light.
Le Grand Acte
Tender veal confit, carried by a green peppercorn sauce with old-fashioned morel mushrooms – an act of suppleness and character.
Lingot of polenta with porcini mushrooms, noble and earthy, like a rider rooted in the ring.
Fagot of three vegetables – in perfect balance, like an acrobatic trio mastering the art of just the right crunch.
A sweet finale
– Williams en poire glacé
– Rosé champagne macaroon – like fireworks in the mouth

And throughout dinner…
The water flows freely, as do the lights under the big top.
The wine, for its part, is played out in two acts – two glasses per guest, to accompany the party without ever stealing the show.
