We look forward to welcoming you on December 24th for a magical evening.

On the program:

  • 7 p.m.: New Year’s Eve dinner
  • 9:00 pm: the big show
  • 11:15pm: Christmas Eve
  • 00:00: 45th Mass under the big top celebrated by Mgr Etienne Guillet, new Bishop of Saint-Denis.

It will be a return to his roots for France’s youngest prelate (48), who as a teenager trained as a groom under the legendary Alexis Gruss!

The Christmas Eve and Mass are free after the show. We look forward to seeing you there!

CHRISTMAS MENU – 89 €*

A feast in five acts, performed under the big top…
Between bursts of winter, woodsy fragrances and the gentle warmth of reunion.

Prologue – Awakening the taste buds
A glass of champagne – for a sparkling reunion, like a salvo of applause before the start of the show.
Three iodized oysters – a breath of sea air in winter, a breeze from the open sea to open the ball.

Act I – The Gentle & Forested Entrance

Brioche de volaille aux parfums boisés – a hushed opening, like a discreet but precise number that sets the scene with elegance.

Butternut fondant, green pepper sauce & bean sprouts – an unexpected duo, between velvet and vivacity, that plays its part gracefully under the big top.

Act II – Le Plat Réconfort
Guinea fowl leg confit with Guérande salt – a noble presence, entering into Morel sauce – deep and woody, like a muted melody enveloping the number.
Potato pressée – solid and melting, the foundation of the number.
Three vegetable bundle – in perfect balance, like a trio of artists mastering the art of counterpoint.

Act III – The Enchanted Dessert
Vanilla & caramel cannelé – crisp on the outside, melt-in-your-mouth on the inside, like a tender last lap.
Lemon yuzu macaron – a light, lively, tangy pirouette that ends the show on a high note.

Intermission – L’Instant Café
Café – to prolong the evening, with a gentle whisper.

Finale – En Harmonie
The water circulates freely, like horses at liberty under the big top.
The wine, on the other hand, is enjoyed in two stages
– two glasses per guest, to accompany the dishes without ever stealing the show.

A cavalcade of flavors and elegant textures…

Sparkling Prologue
– to greet the start of the show – A glass of champagne

L’Entrée en Lumière
– Whole duck foie gras, caressed with fleur de sel and awakened by Sichuan pepper,

Accompanied by a velvety oriental fig marmalade,

Placed on a Black Pepper shortbread – as crisp as a dance step in the light.

Le Grand Acte
Tender veal confit, carried by an old-fashioned Gribiche sauce – an act of suppleness and character.
Lingot of polenta with porcini mushrooms, noble and earthy, like a rider rooted in the ring.
Fagot of three vegetables – in perfect balance, like an acrobatic trio mastering the art of just the right crunch.

A sweet finale
– Williams en poire glacé
– Rosé champagne macaroon – like fireworks in the mouth

Last lap

  • Coffee – a gentle way to prolong the magic
